3 Gut-Friendly Recipes Made With Fermentation Mode

One of the unique functions of the Thermomix® TM6™ is the Fermentation Mode. A mode is an automated function that allows Thermomix® to handle a specific task for you. Fermentation Mode uses constant temperatures to ferment directly in the mixing bowl or to create a warm environment in the Varoma placed above water in the mixing bowl.

We usually talk about Fermentation Mode when it comes to making homemade yogurts and proofing dough, which are great ways to use it. But with our new recipe collection “Fermentation with TM6″ on Cookidoo®, you now have the tools to make kimchi, sauerkraut and so many more gut-friendly fermented foods!

 

Fermentation Health Benefits

 

Fermentation has been around for a long, long time. It is the process in which a substance breaks down into a simpler substance…a great technique to preserve foods. Fermented foods provide a wide range of health benefits and are packed full of nutrients and promote the growth of many beneficial probiotics.

One major health benefit of fermentation is that it can improve digestive health. The probiotics produced during the fermentation process can help bring back a healthy balance of bacteria in your gut and as a result, improving digestion. Fermentation also aids in boosting the immune system and can help reduce infections.

Another additional benefit is that fermented foods can also help increase mood and behavior. Because the brain and the gut are linked, ingesting healthy foods that have been fermented can cause an increase in serotonin, which in turn helps create a positive mood and behavior.

 

Recipe Inspiration

 

Napa Kimchi

Kimchi is a staple in Korean cuisine, made from fermented napa cabbage. For the best result, our recipe development team recommends using Korean chili flakes – gochugaru. They are milder, fruity, and aromatic – if you increase the amount to 5-6 tbsp, you will get a more spicy and fragrant kimchi.

Want an even more intense flavor? Once fermentation is completed, transfer the kimchi to a sterile glass jar or container and press with a fermentation weight to keep contents covered with liquid and wrap with cling wrap for 1-2 days for further fermentation.

 

Sauerkraut

 

Sauerkraut can be enjoyed all throughout the year, not just on New Year’s Day! Rich in good bacteria, sauerkraut is a probiotic that can help with good gut health. It is recommended to eat about a tablespoon a day to aide in digestion and prevent constipation.

To ensure the dish comes out as delicious as possible, our recipe team recommends to not disturb the sauerkraut during the fermentation process to reduce the amount of oxygen reaching it. Luckily, TM6™ enables a stable environmental temperature so that you don’t need to worry.

 

 

Coconut Milk Yogurt

 

What would a fermentation collection be without including a recipe for our delicious Coconut Milk Yogurt? Our recipe development team recommends using yogurt that contains a few of the following live cultures: Lactobacillus acidophilus, Bifidobacterium bifidum, Bifidobacterium, lactis and Streptococcus thermophilus. And for an extra delicious bowl, try serving with dried or fresh fruits, granola, and fiber-rich seeds.
