Cauliflower Mash

  • 28 oz cauliflower, cut into 1–1¼ inch florets
  • 2 garlic cloves
  • 2 oz (¼ cup) whole milk
  • ½ tsp rock salt (adjust to taste)
  • 1 tsp ground black pepper (adjust to taste)
  • 1 oz (2 tbsp) butter
  • 1 oz (2 tbsp) grated Parmesan cheese

Beef Stew

  • 7 oz (about 2 small) yellow onions, quartered
  • ⅓ oz (2 cloves) garlic
  • 1 oz (2 tbsp) olive oil
  • 25 oz (1½ lb) beef chuck, cut into 1¼-inch cubes
  • 7 oz (¾ cup) beef broth
  • 7 oz (¾ cup) red wine or unsweetened cranberry juice
  • 9 oz (2 medium) carrots, cut into ½-inch slices
  • Leaves from 4 sprigs fresh thyme
  • 3 oz (2 tbsp + 2 tsp) tomato paste
  • 3 dried bay leaves
  • 1–2 tsp sea salt (adjust to taste)
  • 2 tsp ground black pepper (adjust to taste)
  • 1 tbsp all-purpose flour
  • 5 oz (about 2 cups) button mushrooms, quartered
  • 7 oz (1½ cups) potatoes, cut into 1¼-inch cubes
  • 6 sprigs flat-leaf parsley, chopped (optional)

  1. Make the cauliflower mash

    Place the cauliflower florets and garlic in the mixing bowl. Pulse until finely chopped, then pour in the milk and cook until the mixture is soft and tender.
